Lemon Crunch Cookies

Maybe I’m wrong but doesn’t dessert with lemon in it feel less guilt inducing than ones laden with chocolates and creams? I don’t know about you but lemon is a flavor I love in anything. The tarter the better. Favourites are cookies, lemon meringue pie, and lemon brownies.

These cookies are so yum!


1/2 cup butter softened
1 cup granulated sugar
1/2 tsp almond extract
zest of 1 lemon
1 egg
15-20 drops Lemon+ oil
1/4 tsp salt
1/4 tsp baking powder
1/8 tsp baking soda
1 1/2 cup flour
powdered sugar for coating uncooked cookie balls
1/2 cup white chocolate chips (optional)

Preheat over to 350F. Cream butter, sugar, almond extract, egg, and Lemon+ oil. Fold in the zest addition. Sift in dry ingredients (salt, baking powder, baking soda, and flour) and mix. Dough will be soft/stiff consistency. Spoon dough into hand and form into 2-in balls. Roll ball into powdered sugar and place onto a slightly greased cookie sheet or parchment lined cookie sheet. Space cookies balls about 2 inches away from each other on the cookie sheet.  Bake for 10-13 mins, until cookies are slightly browned.
